Dominio Romano was born as a tribute to the Romans who introduced the cultivation of vines in the region more than 2000 years ago. Now, with La Cueva (the cave), we look back, observing with a curious spirit to relearn what has been forgotten and return to the origins, back to La Cueva.

Tasting Note

Sight: Bright red color.
Nose: It presents a complex nose, with a mixture of red fruits over an earthy background and balsamic nuances.
Mouth: The palate is fresh and balanced, with a predominance of fruity and lightly toasted notes over soft tannins.

Made with Tinto Fino.

Winemaking

Hand harvested. Prefermentative cold maceration for 3 days. Alcoholic fermentation in clay amphorae for 14 days at 24ºC. Maceration for a total of 15 days.

How to pair this organic and vegan wine

Roast poultry and grilled vegetables.
Serve at 15-16ºC. Decant before serving.
